So Fresh and So Clean Clean

Since summer is winding down, I wanted to post this summer salad recipe before time is up. I subscribe to the Whole Foods weekly e-mail, and their special one day was for pineapple. One of the recipes included in that e-mail was for ...

Tangy Pineapple-Cucumber Salad

And let me tell you, this salad is absolutely scrumptious and is a great side dish for any bbq or summer meal. Plus, it is SUPER easy to make.

Ingredients:
3 C. chopped fresh pineapple
2 cucumbers - peeled, seeded and sliced
2 green onions thinly sliced
1/4 C. lime juice

Steps:
Gently toss all ingredients together in a large bowl and serve!!!



Tips:
The recipe also calls for mint, but I choose to leave it out in this salad.

Also, don't skimp and use bottled lime juice - all the other ingredients in this recipe are so fresh and crisp, don't ruin it with bottled lime juice!
